12 Days of Christmas ~ Day 12 ~ Christmas Morning Brunch

Day 12 ~ Christmas Morning Brunch



Waking up on Christmas morning is one of my favourite moments of the year. The smell of coffee, my Dad patiently waiting for the gang to wake up, the twinkling lights of the tree and the living room filled with treasures that everyone has lovingly gathered for one another. I’m blessed to spend Christmas with family and friends every year. This year is a very special year because I am an Aunty for the first time. This is my Niece’s first Christmas. I am also thrilled to have my Grandpa and extended family spend the holiday’s with us. One of my family’s traditions is to have brunch on christmas morning. The criteria for our brunch is that it’s easy and delicious!


Here’s what’s on the menu…




Jamie’s French Toast Casserole with Strawberry Syrup

1 loaf Texas Toast (cubed)

8 oz Cream Cheese

6 large Eggs

4 cups Half & Half

1/2 cup Butter

10 oz Strawberry Jam




  1. Arrange 1/2 of the cubed texas toast in a greased 13 X 9 inch pan.
  2. Sprinkle cream cheese pieces.
  3. Add remaining texas toast to the pan.
  4. Whisk together eggs, half & half and butter.
  5. Pour over bread mixture, pressing bread cubes to absorb the egg mixture.
  6. Cover and refrigerate for 8hrs
  7. Bake, covered, at 350 degrees for 25 minutes.
  8. Heat strawberry jam in a sauce pan over low heat, serve with casserole.



Once you try this you’ll be addicted!






Ham + Cheese Quiche



2 Pie Crusts (9 inch)

2 cups Cooked Ham (diced)

2 cups Sharp Cheddar Cheese (shredded)

4 Green Onion (diced)

4 Eggs (large)

2 cups Half & Half Cream

1/2 tsp Salt

1/4 tsp Pepper



  1. Line unpricked pastry shells with a double thickness of heavy foil. Bake at 400 degrees for 5 minutes. Remove foil ; bake 5 minutes longer.
  2. Divide ham, cheese and green onion between the shells.
  3. Whisk eggs, cream, salt and pepper.
  4. Pour into shells. Cover with tinfoil and bake for 35 minutes. Remove tinfoil and continue baking until top browns.
  5. Let stand for 5-10 minutes before cutting.






Deb’s Fruit Salad







1 cup Sugar

1 cup Water

1 zest & juice Orange

1 Vanilla Bean





9 cups Strawberries

4 cups Blueberries

2 cups Green Grapes (halved)

2 cups Red Grapes (halved)

1 cup Pomegranate Seeds

3 Mandarin Oranges


Add any seasonal fruit you like. The freshest fruit always gives the best results.



  1. Place sugar, water, orange zest, orange juice and vanilla bean in a small pot and stir to dissolve the sugar. Then bring to a boil. Turn the heat to low and simmer for 15 minutes to thicken. Set aside to cool.


  1. Add fruit to a large bowl, pour cooled syrup over and toss together. Decorate with mint leaves and chill until ready to serve.

    Beautifully put together Dayle! Having sampled Jamie’s Ham and Cheese Quiche…this will definitely be my menu for Christmas Day Brunch!
